Vegan Holiday Drinks


Before I was vegan I loved the seasonal peppermint ice cream and shakes during the holiday season. I wanted to try and make a vegan version and it was awesome, so it inspired me to try and make a couple other drinks as well... a vegan hot chocolate and crockpot apple cider! I don't think I've had any of these drinks since I've been vegan and Im so excited I can have them now.

Thankful

I am thankful for so much. I have a pretty great life and know it.

Firstly, I am thankful for my amazing husband. He works hard and plays hard. We always have a great time together. This past year moving to Vegas has been great for us.

Rocky's First Birthday

We've had Rocky since he was about four months old. He has brought me so much happiness I can hardly explain it. I love him like he's my human child. He is the most entertaining, hilarious little guy.

Celebrating World Vegan Month at Violette's Vegan with Vegas Lifestyle Influencers

Last week I went to my very first Vegas Lifestyle Influencers event.

I was so excited to see an all vegan event pop up at one of my favorite restaurants in Vegas, Violette's Vegan.

We were served several of their starters, salads, entrees, and sides. Everything was really good. It's so hard to pick a favorite. Their new/coming soon cauliflower bites, positively pad thai, and mama mia (egg plant parmesan) were the crowd favorites!

Last weekend I finally got to try VegeNation. Pretty sure its the most known vegan restaurant in Las Vegas. I love the area it's in... Downtown Las Vegas, right by Fremont street, Container Park and the Arts District.

Anniversary Brunch at Terrace Point Wynn Las Vegas

My husband and I got married six years ago in Vegas, before we lived in Vegas... Never thinking we would live in Vegas. Now, six years later I couldn't imagine being in any other city. We decided to have a nice brunch at the Wynn Terrace Point. The main reason I picked the Wynn is because it has vegan options at every one of its restaurants. 

We sat out on the patio that faces the pool. It was beautiful. 

We both ordered mimosas 

I ordered the vegan Belgian waffle with berries. It was really good. 
I will defiantly be back to try more of their menu!


We also walked around Caesar's Palace where we got married in their Venus garden.
We had a wonderful anniversary on the strip.

Vegan at Universal Studios Hollywood


I've been to Universal Studios a lot... I use to live down the street and would go randomly all the time. After moving away and becoming vegan I learned how difficult it was to find a vegan meal at Universal. Recently on their website they listed a dietary food guide and have a tiny vegan selection. I decided to try out one meal on there this weekend.

Vegan in Vegas: Hussong's Cantina

For my husband's birthday this weekend we went to the Luxor to see the Titanic Exhibit. He didn't want to make dinner plans, but wanted to walk around and see what they had. The Luxor is connected to Mandalay Bay by shops and restaurants. One of the first restaurants we came to was Hussong's Cantina. We've eaten there, but at their Summerlin location off of the strip. I knew they had vegan options and also things my husband would like so we ate there.



I had the vegan chile relleno this time and last time I had the vegan fish tacos. Both dishes were really good and I can't wait to go back!

Two Years Vegan


Sunday August 13th was my two year vega-versary! I feel like I have to say, "Wow I can't believe its already been two years", but honestly feels like I've been vegan forever. It's my normal. Sometimes I forget that I wasn't always vegan.

There are a few things that are hard about being vegan like milk being in A LOT of foods that don't need milk product, or being judged on getting no cheese on my veggie pizza... =) But really being vegan is awesome.

It's kind of crazy because I actually went vegan on a whim. Two years ago I was not feeling great and I wanted to eat healthier, so I tried the Whole 30 diet. Basically you can only eat fruits, vegetables, eggs, and meat for thirty days. I hated eggs and rarely at meat but on whole thirty to get enough calories in I had to eat them. I struggled that year with eating healthy off of the whole thirty. One night when I was writing a grocery list I thought, "I don't eat dairy anymore so if I eliminated meat and eggs, I can add grains and other things that aren't on whole thirty and do a vegan challenge then maybe vegetarian." I changed my grocery list to vegan only. It was going to be my next challenge, but I watched tons of videos and documentaries on being vegan. My week of "being vegan challenge" turned into a lifestyle change forever and I couldn't be happier!

Utah Favorites

Last year I moved from Los Angeles to Northern Utah. Now Im in Las Vegas. Utah is very different than California, with many pros and cons. I thought I would stick to the positive and share some of my favorite things and places in Utah.
My favorite place in all of Utah is Park City. No matter what time of year it is its beautiful and theres lots to do. In the summer they have biking, hiking, concerts, farmers markets... in the winter there is skiing, snowboarding, sledding, all the winter sports. 
I really enjoyed experiencing my only white Christmas. The snow is so beautiful, especially on the mountains. 
My favorite place to eat in Salt Lake is a little to go vegan sandwich place called Bud's. They have delicious sandwiches, salads, and zucchini chocolate chip cookies! Its best to go when its not snowing so you can eat out or just take it to go if its too cold out!
Another one of my favorite restaurants is in Ogden, Sonora Grill. They have a whole vegan section on their menu. It was our favorite place to bring guests. Theres something for everyone there.
I really enjoyed exploring around Salt Lake. The capitol building is beautiful with a park and hiking close by. 
One of the best times I had in Utah was camping up in Big Cottonwood Canyon. It was absolutely beautiful, except its really scary driving down the mountain in the middle of the night!

Also I can't forget the $5 movies on Tuesdays. Im pretty sure almost all (except for the fancy recliner theaters) do $5 tickets every Tuesday. I don't know the reason, but its awesome!
