Vegan in Vegas: Hussong's Cantina

For my husband's birthday this weekend we went to the Luxor to see the Titanic Exhibit. He didn't want to make dinner plans, but wanted to walk around and see what they had. The Luxor is connected to Mandalay Bay by shops and restaurants. One of the first restaurants we came to was Hussong's Cantina. We've eaten there, but at their Summerlin location off of the strip. I knew they had vegan options and also things my husband would like so we ate there.

I had the vegan chile relleno this time and last time I had the vegan fish tacos. Both dishes were really good and I can't wait to go back!

Two Years Vegan

Sunday August 13th was my two year vega-versary! I feel like I have to say, "Wow I can't believe its already been two years", but honestly feels like I've been vegan forever. It's my normal. Sometimes I forget that I wasn't always vegan.

There are a few things that are hard about being vegan like milk being in A LOT of foods that don't need milk product, or being judged on getting no cheese on my veggie pizza... =) But really being vegan is awesome.

It's kind of crazy because I actually went vegan on a whim. Two years ago I was not feeling great and I wanted to eat healthier, so I tried the Whole 30 diet. Basically you can only eat fruits, vegetables, eggs, and meat for thirty days. I hated eggs and rarely at meat but on whole thirty to get enough calories in I had to eat them. I struggled that year with eating healthy off of the whole thirty. One night when I was writing a grocery list I thought, "I don't eat dairy anymore so if I eliminated meat and eggs, I can add grains and other things that aren't on whole thirty and do a vegan challenge then maybe vegetarian." I changed my grocery list to vegan only. It was going to be my next challenge, but I watched tons of videos and documentaries on being vegan. My week of "being vegan challenge" turned into a lifestyle change forever and I couldn't be happier!

Utah Favorites

Last year I moved from Los Angeles to Northern Utah. Now Im in Las Vegas. Utah is very different than California, with many pros and cons. I thought I would stick to the positive and share some of my favorite things and places in Utah.
My favorite place in all of Utah is Park City. No matter what time of year it is its beautiful and theres lots to do. In the summer they have biking, hiking, concerts, farmers markets... in the winter there is skiing, snowboarding, sledding, all the winter sports. 
I really enjoyed experiencing my only white Christmas. The snow is so beautiful, especially on the mountains. 
My favorite place to eat in Salt Lake is a little to go vegan sandwich place called Bud's. They have delicious sandwiches, salads, and zucchini chocolate chip cookies! Its best to go when its not snowing so you can eat out or just take it to go if its too cold out!
Another one of my favorite restaurants is in Ogden, Sonora Grill. They have a whole vegan section on their menu. It was our favorite place to bring guests. Theres something for everyone there.
I really enjoyed exploring around Salt Lake. The capitol building is beautiful with a park and hiking close by. 
One of the best times I had in Utah was camping up in Big Cottonwood Canyon. It was absolutely beautiful, except its really scary driving down the mountain in the middle of the night!

Also I can't forget the $5 movies on Tuesdays. Im pretty sure almost all (except for the fancy recliner theaters) do $5 tickets every Tuesday. I don't know the reason, but its awesome!
