Vegan Camping

A few weeks ago my husband and I went on an overnight camping trip in Cottonwood Canyon in the Utah mountains. It was so beautiful! The last time I went camping was when I was a child with my family and I wasn't in charge of food. The first time camping as an adult and a vegan!

Lunch: Peanut butter and jelly sandwiches
Dinner: Veggie dogs and chips
Dessert: Dandies S'mores
Breakfast: Bottled smoothie, Grapes, and a banana with peanut butter.

I was lucky to be able to go to the store for breakfast, but if not I would have just had a pb&j. Next time I will try and be more creative and healthy, but for a last minute quick camping trip I think I did alright!
