At the beginning of every month I make new goals for myself to motivate my workouts.
I was thinking of the ways that help me and thought it would be helpful to share, so here they are.

What I Ate This Week Vegan & My Workouts

I decided to really focus on eating healthy and up my workouts to see and feel better results. I have been keeping track of my food and workouts. This picture is from the beginning and end of the week. Im excited to keep this up. 
(I have a video at the bottom if you'd rather watch what I ate, than read it.)

Monday February 29th:
Breakfast: Oatmeal with blueberries
Snack: Snap peas, baby carrots, and hummus
Lunch: Leftover rice and veggies (sautéed onions, mushrooms, garlic, spinach, broccoli, carrots)
Snack: 3 Mandarins
Dinner:More rice and veggies
Workout: 30 Sit-ups, variation of crunches to one song, 5 push-ups/20 second plank/15 mountain climbers (3x)

Tuesday March 1st:
Breakfast: Smoothie and Avocado Toast
Lunch: Small Bowl of Pasta Salad
Snack: Apples and Peanut Butter
Dinner: Pasta Salad on top of spinach
Workout: yoga & ran 1 mile
Feeling good today. I want to do all the workouts and eat all the food I just got from the grocery store. Im excited for the meals I have planned. I am a little sore from my workout yesterday, but in a good way. haha. 

Wednesday March 2nd:
Breakfast: Baked Sweet Potato
Lunch: Pasta Salad with Spinach
Snack: Snap peas, baby carrots, and hummus
Snack: Nature’s Bakery Blueberry Brownie 
Dinner: Little red potatoes with nutritional yeast, salt, and pepper
Workout: 10 minute morning Yoga. 8 pound weights. squats. sit-ups. push-ups, booty workout…
I just did my morning yoga and I feel great. I really do notice a difference in not only my body/energy, but also my attitude when I start the day out with yoga! Felt a little tired before my night workout but ok after and feeling strong!

Thursday March 3rd:
Breakfast: Smoothie
Lunch: Rice Broccoli and Spinach with sesame dressing
Snack: Popcorn with nutritional yeast
Workout: Morning yoga. 1 mile run
I felt really good today, stronger. I also wasn't hungry at all today. I just ate when I was hungry. Maybe it was because I did have a big smoothie and lunch.

Friday March 4th:
Breakfast: Oatmeal with almond milk and banana & a coffee 
Lunch: Homemade veggie pizza
Snack: Apple and peanut butter 
Dinner: Rest of pizza
Workout:20 min yoga video. Medicine ball workout.

Saturday March 5th:
Breakfast: Banana and baked sweet potato
Lunch: Spring rolls and zucchini 
Snack: Lenny and Larry Complete Cookie
Dinner:Veggie Sushi
Workout: rest day!
A little sore today from yesterday’s yoga workout (it focused on arms and abs) also a bit tired. I think I have allergies. 

Sunday March 6th:
Breakfast: Banana and apples and peanut butter 
Lunch: Zucchini and rice
Snack: popcorn
Dinner: Black bean burger from Wendy's (No cheese or ranch)
Workout: Yoga and Abs/Arms workout & squats.
It rained/snowed today so I wasn’t able to run, so I did abs and arms workouts and squats.

My Workout Motivation

So I've had a bit of a burn out and am in need of a some motivation. I hate starting over with running or working out.

The last post I wrote was about me falling while on a run. It took a toll on my body and I didn't really want to run. I guess I was afraid of falling again. I've moved from Los Angeles to Salt Lake and that whole process took a lot away from healthy eating and working out. Im all settled in my new home now and ready to get back to business!

I remember doing Whole30 or training for and running my half marathons or different health/fitness challenges that were really hard at the time, but once they are over I forget what I did or even how tough it was to go through, so I have decided to track what Im eating, my workouts, how Im feeling and share it on here. I hope that it will motivate me to keep going and not stop once I've reached one goal. So maybe I should also set a goal for each week/month.

My goal for now is to stick to a work out routine I've made for myself.
Yoga every morning
Mondays, Wednesdays, Fridays: Some type of strength training, dance video, weights (really anything to get my body moving)
Tuesdays, Thursdays, Sundays: Get out and run!
Saturdays: Rest day

My husband and I were looking into getting an elliptical/bike maybe we will get one this month. I can't wait to start adding different equipment to my home to build an at home gym area! I would also like to get a bike to go around salt lake with my hubby. We only have one bike, that is actually a bike I got when I was like ten (I was a full grown adult at 10 haha). Until then we have our legs to get us some exercise!

Also Salt Lake has a 1/2 marathon sometime in April which would also help me stick to my routine. I love races to help keep me motivated!

Wipeout While Running

This past Thursday I was running on the concrete sidewalk and have no idea how, but I tripped and skinned both knees. It was on a busy street, so I just got up and kept running until there wasn't a ton of people around. Haha. 
I really have no idea how I fell. I think I was way too zoned out and just tripped. It was like it was in slow motion and I almost thought I could catch my balance, but that didn't happen.
I am so glad I didn't hurt myself more than skinned, bruised, swollen knees. 

The hardest part about an injury or going something so stupid like tripping over (Im guessing) uneven sidewalk is first resting and second getting back out there. 

I'm so bored, but have to rest. Last night I was standing for just 20 minutes and my knee started to swell so bad. I had to elevate it and ice it. 

Hopefully I will be back to running soon!

Husband Is Upset That I'm Vegan

I've only been vegan for three weeks now and so far it's been great. I've only gone out to eat three times with my husband. Twice at PizzaRev and once at Chipotle. They are both fantastic for vegans, vegetarians, and meat eaters. I told him that I am doing this for me and won't push it on him, especially because it is so new to me. Today, after being vegan for 3 weeks, my husband had a little freak out about how me being vegan is too extreme... not because of nutrients or health but because of convenience.

One of the funniest things he said is that I breath in dirty germ air so Im eating "animals" I couldn't help but laugh and told him I will try to stop breathing.

He said me being vegan affects him (I agree) and getting food won't be easy. He said it would be easy if we lived on a farm, but not in a city. I told him we live in Los Angeles, CA. It's an amazing place for a vegan. 

He said there are no quick meals. I said to eat a banana or mango or any other fruits/veggies we have. He said he does't want fruit or vegetables. So I said I can meal prep rice and potatoes and other things to make a quick meal. 

He asked me, "so if we were on the road and the only thing around for miles was a McDonalds, you wouldn't eat and you would starve?" I said that on a road trip I would be prepared. He said that if I had to choose McDonalds or starve... So I just said if we were in a situation where I had to eat McDonalds or die duh, I would eat something.

Him:The stuff on earth is meant to be eaten.
Me: It's disgusting. 
Him: So what, who cares?
Me: me.

He also said we need to make two different meals. for the first two weeks I was making meals (except for any meat he wanted... He usually cooked the meat and enjoys bbqing.) This week we both went to the grocery store, usually I have a list... he told me to just get whatever I felt like and he would get what he wanted... So thats what we did... So this week yes there has been separate meals, but I thought he wanted a week of fun whatever meals. Even when I wasn't vegan I would make a meal and give him all the meat most of the time.

I also told him that there are vegan recipes mimic anything and everything he or I could ever want. 

Update: (One month vegan tomorrow 9/9) A few days after him being angry, we had no food in the house.  He asked if I wanted to get food and where. I suggested VeggieGrill, an all vegan restaurant. He got a "chicken" burger and loved it. We also shared a carrot cake! Im glad that he is open to trying new foods. I get that its a big change and being able to talk openly about it really helps. I try to listen with an open mind and see it from his point of view. Im really happy that he's been supportive for the most part.

 I just thought the things he was saying to me were funny and wanted to share!
